Swiss Enchiladas

Enchiladas Suizas are a traditional Mexican dish consisting of corn tortillas filled with shredded chicken and topped with a creamy green sauce and grilled cheese. 

The name ‘Enchiladas Suizas’ is derived from the cream and grilled cheese reminiscent of Swiss dishes.

The typical preparation of Enchiladas Suizas involves cooking corn tortillas in green sauce before filling them with shredded chicken. 

They are then covered with more salsa verde and sprinkled generously with grated cheese, preferably Swiss cheese. Finally, they are baked until the cheese is melted and lightly browned.

Enchiladas Suizas are often served with rice, refried beans, guacamole, sour cream and a garnish of lettuce and tomato. 

This dish is a delicious combination of flavours, with the creaminess of the green sauce and cheese contrasting perfectly with the flavour of the chicken and corn tortillas.

Red Enchiladas

Red Enchilada is a traditional Mexican dish consisting of corn tortillas filled with shredded chicken, beef, cheese or other ingredients, which are then rolled up and covered with a spicy red sauce. 

This dish is very popular in Mexico and is served as lunch or dinner.

To prepare Enchiladas Rojas, shredded chicken (or other filling) is first cooked and seasoned with spices to taste. 

Then, heat the corn tortillas on a comal or frying pan so that they are soft and pliable. Fill the tortillas with the shredded chicken and roll them up.

The red sauce, on the other hand, is usually prepared by cooking dried chillies such as guajillo, ancho or pasilla in hot water. They are then blended with garlic, onion, tomato and spices until a smooth and tasty sauce is obtained. This red sauce is poured over the stuffed enchiladas before serving.

Green Enchiladas

Enchiladas Verdes are a classic Mexican dish consisting of corn tortillas filled with shredded chicken, pork, cheese or other ingredients, topped with a spicy green sauce and baked in the oven. 

This dish is known for its fresh and vibrant flavour, thanks to the green sauce that characterises it.

To prepare Enchiladas Verdes, shredded chicken or pork is first cooked, seasoned with spices to taste and set aside. 

Then, the green sauce is prepared, which is traditionally made with green tomatillos, green chillies such as jalapeños or serranos, coriander, onion, garlic and chicken stock. All of these ingredients are cooked and blended into a smooth, vibrant sauce.

Once the salsa verde is ready, the corn tortillas are dipped briefly into the sauce to soften them and then filled with the shredded chicken. The filled tortillas are rolled up and placed on a baking sheet. 

The enchiladas are then topped with more salsa verde and sprinkled with grated cheese, usually fresh cheese, Cotija cheese or Monterrey Jack cheese.

Mole Enchiladas

Enchiladas de Mole are a delicious and distinctive variation of traditional Mexican enchiladas. 

Unlike red or green enchiladas, which are covered with spicy chilli-based sauces, mole enchiladas are covered with mole, a complex and rich sauce that includes ingredients such as chillies, chocolate, spices, nuts and more.

To prepare mole enchiladas, you first cook and shred the chicken or prepare the filling of your choice. Then, heat the corn tortillas so that they are soft and can be easily filled. Fill the tortillas with the shredded chicken and roll them up.

Mole is prepared in a large saucepan, combining ingredients such as dried chillies (usually ancho, pasilla or mulato chillies), tomatoes, onion, garlic, plantain, almonds, peanuts, sultanas, chocolate, cinnamon and cloves (although other ingredients can also be added). 

These ingredients are roasted, cooked and then blended into a thick, smooth sauce.

Once the mole is ready, it is poured generously over the stuffed enchiladas in a baking dish. The enchiladas are completely covered with the mole sauce.

Optionally, grated cheese can be sprinkled over the enchiladas before baking.

Tamaulipas Enchiladas

Enchiladas Tamaulipecas are a regional variation of Mexican enchiladas, originally from the state of Tamaulipas, Mexico. They are known for their unique flavour and the characteristic ingredients used in their preparation. 

Unlike other varieties of enchiladas, Tamaulipecas are usually drier and have no sauce in their preparation.

The preparation begins by cooking the shredded chicken and then mixing it with the cooked potatoes and carrots. This mixture is then placed in the center of each corn tortilla, along with strips of poblano peppers and crumbled queso fresco. The tortillas are rolled up and placed on a plate or tray.

Unlike other enchiladas that are covered with sauce, Enchiladas Tamaulipecas are served dry, without sauce. They can be served warm or at room temperature, and are often served with sour cream and chopped red onion on top.

Cheese Enchiladas

Enchiladas de Queso are a variety of Mexican enchiladas with cheese as the main ingredient. These enchiladas are a popular choice, especially among vegetarians and those who enjoy the taste of melted cheese.

The basic preparation involves filling corn tortillas with shredded cheese, rolling them up and covering them with sauce, then baking them until the cheese is melted and the sauce is hot.

Enchiladas de Queso are delicious and comforting. And they can be customised to suit your tastes. You can serve them with garnishes such as sour cream, chopped cilantro, sliced onion, or avocado.

Enchiladas Potosinas

Enchiladas Potosinas are a unique and delicious variation of Mexican enchiladas from the state of San Luis Potosi. 

Unlike traditional enchiladas, Enchiladas Potosinas have a special preparation that gives them a distinctive flavour. Enchiladas Potosinas are known for their spicy flavour and rich cheese and meat filling.

They are an emblematic dish of the San Luis Potosi region and are highly appreciated by locals and visitors alike.
