For 12 units you will need:
- Instant nixtamalised corn flour for tortillas: 175 grams
- Salt
- Water: 265 grams
How to make corn tortillas for tacos?
To begin with, put the flour in a bowl and then mix it with the salt.
Once everything is mixed, add the water little by little while stirring with your fingers.
It is important that the dough is slightly soft and can keep its shape. The dough can be checked for correctness by rolling it into small balls while pressing with a finger.
It is best to cook the taco tortillas on a comal, but if you don’t have one, you can use a frying pan or a griddle.
The oil in the frying pan should be hot when the tortillas are introduced, and the heat should be high, although it can be regulated as the tortillas are being made, to prevent them from burning.
Before placing the taco tortillas in the chosen cooking utensil, the dough should be divided into small balls of the desired size.
For example, if you want to make a small tortilla, the ball should be the size of a plum.
Once you have your balls, flatten them with a press or tortilla press, but if you don’t have one, place the ball between two pieces of cling film and flatten it with a heavy object, such as an oven tray.
The most important thing is that the taco tortillas are a few millimetres in size and as thin as possible.
The balls can also be rolled out with a rolling pin, although they can be rolled out evenly. When the tortilla is the desired size, place it on the comal or frying pan with the oil very hot.
Mexican tacos have a wide variety of ingredients. You can use pork, add other vegetables, beans, rice, etc. They can also be made vegetarian, with sautéed vegetables, or use fish.
